Service feels understaffed

The first time I tried this place, it took us 3 hours for a holiday business lunch. I was ok with it taking 2 hours, but 3 hours is a disaster. I came back this year, same holiday lunch, and we were back in the office in 90 minutes. Much better!!!The service team seems to be overwhelmed sometimes during lunch peaks... The food was very good, but I must say pricey for the quantity. Unfortunately the evening the five of us were there there must have been some absent waiters. We were served by two women, who unfortunately lacked the proper etiquette for a restaurant in this class.
